    Griddled lamb with mint pesto

    A speedy supper recipe with fresh basil and mint

    • Preparation time: 5 minutes
    • Cooking time: 15 minutes
    • Total time: 20 minutes 20 minutes


    • 25g pack fresh basil
    • 20g pack fresh mint
    • 1 garlic clove, crushed
    • 30g Cooks’ Ingredients toasted pine nuts
    • ½ lemon, juice
    • 4 tbsp extra virgin olive oil
    • 400g pack essential Waitrose lamb steaks
    • 1 tbsp essential Waitrose olive oil


    1. For the pesto, use a mini processor or pestle and mortar to reduce the herbs, garlic, pine nuts and lemon juice to a smooth paste. Gradually add the extra virgin olive oil; season to taste, then set aside.
    2. Brush the lamb steaks with the olive oil and preheat a griddle. Cook the lamb for 5–7 minutes on each side. Serve with the pesto drizzled over, alongside a herb salad of lamb’s lettuce, flat-leaf parsley, some fresh basil and mint
