    Griddled Papaya With Lime Syrup and Iced Lychee Yogurt

    Large, fleshy lychees from the southern hemisphere are abundant in January. Combine them with vitamin-packed papaya in this colourful, dinner party dessert. Prepare and chill the syrup and freeze the lychees ahead of time. To serve, all you have to do is griddle the papaya and blend the iced yogurt.

    • 300g fresh lychees
    • Finely grated zest and juice of 2 limes
    • 50g caster sugar
    • 2 papayas
    • 1 tsp sunflower oil
    • 150g pot Total 0% Fat Authentic Greek Strained Yoghurt


    1. Peel the lychees, remove and discard stones. Arrange on a sheet of baking parchment paper on a baking tray, and place in the freezer for at least 2 hours.
    2. To make the lime syrup, place the lime juice and sugar in a small pan with 100ml cold water. Heat gently, stirring until the sugar dissolves, then bring to the boil. Simmer for 5 minutes or until the syrup starts to thicken slightly. Leave to cool then add the lime zest. Chill in the fridge.
    3. Halve the papaya, scoop out and discard the seeds, then remove the skin. Cut each half lengthways into thick slices or wedges. Preheat a ridged griddle pan. Brush the papaya slices with the oil then cook over the highest heat for 1-2 minutes each side to give charred bar marks. Arrange on 4 plates.
    4. Place the frozen lychees in a food processor then, with the motor running, add the yogurt to form a softly frozen mixture.
    5. Place a spoonful of iced lychee yogurt on each serving plate with a few slices of papaya. Drizzle the chilled syrup over and serve immediately.

    Cook's tips

    Lychees are best kept at room temperature, whereas papayas should be stored in the fridge. The peel from both fruits is inedible.


    Scoop out the seeds and pulp from a passion fruit then stir into the chilled syrup. This will add flavour, with the seeds giving a lovely crunch.
