    Grilled Bananas in Pancetta

This may sound odd, but it's a delicious combination; great as a nibble with drinks, or even for breakfast with buttered toast.

    • Preparation time: 15 minutes
    • Total time: 15 minutes 15 minutes

    Serves: 4

    • 4 bananas
    • 16 slices pancetta or 8 slices streaky bacon

    1. Line a shallow baking tray with non-stick foil and put a grill rack in the bottom. Turn the grill to high and place the baking tray under it to heat while you prepare the bananas.
    2. Peel the bananas and slice in half lengthways then wrap each banana half with 2 slices of pancetta. (If you are using bacon, cut each rasher in half and stretch with the back of a knife before wrapping round the bananas.)
    3. Lay the bananas on to the hot grill rack. Grill for 2-3 minutes on each side or until the pancetta is crisp. Serve straight away.
