    Grilled Chicken Salad Pittas

    Serves: 4

    Ingredients

    • 4 skinless organic chicken breasts
    • 3 tablespoons of extra virgin olive oil
    • 1 clove of crushed garlic
    • 1 tablespoon of oregano, roughly chopped fresh
    • A pinch of freshly ground black pepper
    • Juice of half a lemon
    • 2 salad onions
    • 2 baby organic cucumbers
    • 2 cos lettuce hearts
    • Goat's milk yogurt
    • 4 large pitta breads

    Method

    1. Trim 4 skinless organic chicken breasts and marinate for at least 20 minutes in 3 tablespoons of extra virgin olive oil, 1 clove of crushed garlic, 1 tablespoon of roughly chopped fresh oregano, a pinch of freshly ground black pepper, and the juice of half a lemon.
    2. Roughly slice 2 salad onions, 2 baby organic cucumbers and 2 cos lettuce hearts. Mix the salad greens together.
    3. Pan-grill the chicken for about 5 minutes on each side, or until it is cooked, then remove the meat from the pan and slice. Add seasoning to taste.
    4. Preheat the grill to medium-high, and warm through 4 large pitta breads, then slice down one side and gently prise them open. Stuff the bread with the salad and the sliced chicken, then spoon over some goat's milk yogurt to taste, and eat immediately.
