    Grilled Lemon and Garlic Mackerel Toasts with Roasted Tomatoes

    • Preparation time: 5 minutes
    • Cooking time: 60 minutes

    Serves: 4

    Ingredients

    • 4 plum tomatoes
    • 4 mackerel, each cut into 2 fillets
    • 1 lemon, pared zest and juice
    • 2 garlic cloves, sliced
    • 4 tbsp extra virgin olive oil
    • 8 slices rye or sourdough bread
    • 50g watercress

    Method

    1. Preheat the oven to 150°C, gas mark 2. Slice the tomatoes in three lengthways and season. Place in a roasting dish, cut-side up, and roast for 50 minutes.
    2. Turn the oven up to 200°C/gas 6 and add the mackerel to the dish. Scatter with the lemon zest and garlic, season and drizzle with the olive oil. Roast for 6–8 minutes until cooked through.
    3. Toast the bread on a baking sheet under the grill and top each slice with watercress, some tomato pieces and a mackerel fillet. Drizzle over the juices from the roasting dish, squeeze the lemon over and serve 2 toasts per person.
