    Grilled Mackerel on Wheaten Bread with Tomatoes

    Serves: 1

    Ingredients

    • 1 tsp butter
    • 1 mackerel fillet
    • 1 slice of wheaten bread
    • Cherry tomatoes

    Method

    1. Preheat the grill to high. Melt 1 tsp butter in a frying pan over a high heat, season 1 mackerel fillet and add to the pan, skin side up. Cook for 2 minutes then place under the grill for 2-3 minutes until the skin is crisp.
    2. Add a slice of wheaten bread and a few cherry tomatoes to the grill pan with the fish. Grill for 2 minutes more until the bread is toasted and the tomatoes soft.
    3. Butter the toast, top with the fish and serve with the tomatoes.
