    Grilled Mushrooms with Crispy Bacon Bits

    Serves: 2


    • 15g butter, diced
    • 2-4 large flat mushrooms
    • 2-4 organic round tomatoes
    • 4 slices good back bacon
    • Salt and freshly ground black pepper
    • Cayenne pepper
    • Flat leaf parsley (optional)


    1. Preheat the grill to medium high. Line the grill tray with foil before adding the rack. Wipe the mushrooms and remove their stalks. Place, stalk-side up, on the grill. Halve the tomatoes and place, cut-side up, next to the mushrooms. Remove any rind from the bacon and place on the grill rack too.
    2. Season the mushrooms and tomatoes with salt and pepper. Add a tiny sprinkling of cayenne pepper to each mushroom. Dot the mushrooms and tomatoes with butter. Grill for 6-7 minutes.
    3. Remove the tray from the grill and increase the heat to high. Flip the bacon. Flip the mushrooms - basting each in its buttery juices. Return the tray to the grill and grill for a further 4-5 minutes.
    4. Divide the tomatoes and mushrooms between 2 plates. Cut the bacon into large chunks and pile on to the mushrooms. Add parsley leaves, if you like. Spoon the grill pan juices over and serve.
