    Grilled Pesto Chicken Bruschetta

    A light summery starter or lunch, perfect to enjoy in the garden with friends.

    Why should your recipe win?
    Because it's one of the quickest and tastiest starters to make for a spring or summer dish. You could also barbecue the chicken to enjoy it al fresco.

    • Total time: 5 minutes prep + 20 minutes cooking

    Serves: 4

    Ingredients

    • 300ml pot of half-fat creme fraiche
      190g pot of your favourite pesto (red or green)
      2 free-range chicken breasts
      Loaf of ciabatta
      Squeeze of lemon juice
      Seasoning
      Dash of extra virgin olive oil
      Watercress salad and vine tomatoes (to serve)

    Method

    1. Turn on grill to medium/high setting. Butterfly chicken & season, brushing each lightly with olive oil. Place on grill pan & grill for 20 minutes or until chicken is cooked through. Remove from grill & set aside to cool. Cut ciabatta into thick slices, brush with oil & grill until golden. After chicken has cooled, shred using two forks, place in a bowl & mix in the creme fraiche, lemon juice & pesto, according to personal taste. Serve on bruschetta with watercress salad & vine tomatoes.
