    Halloumi Brochettes with Basil Oil

    • Preparation time: 15 minutes, plus 4-6 hours marinating
    • Cooking time: 6 minutes to 7 minutes

    Serves: 4 - 6

    Ingredients

    • 250g block halloumi cheese
    • 1 large red pepper
    • 1 large yellow pepper
    • 2 large courgettes
    • 12 fresh button mushrooms
    • Freshly ground black pepper
    • 1 small bunch of basil
    • 100ml olive oil
    • 100ml vegetable oil

    Method

    1. Prepare some wooden skewers by soaking them in cold water for 15 minutes. This will stop them charring on the barbecue.
    2. Meanwhile, cut the halloumi into 12 equal cubes. Cut the peppers and courgettes into similar-size chunks.
    3. Thread the chunks of cheese and vegetables, with the mushrooms, on to the skewers. Season with black pepper (halloumi is already very salty).
    4. Blend the basil with both oils in a liquidiser. Drizzle the basil oil over the brochettes and barbecue, turning regularly, and basting with the oil, for 6 or 7 minutes until the halloumi is just golden brown.
