    Ham, Pear and Pecorino Salad

    Dry cured ham has a sweet flavour that works well with juicy pears, bitter chicory and shavings of salty Pecorino.

    Serves: 6

    Ingredients

    • For the dressing
    • 2 tbsp olive oil
    • 2 tsp balsamic vinegar
    • Pinch Bart Crushed Chillies
    • For the salad
    • 3 x 80g packs Waitrose Italian Dry Cured Ham (18 slices)
    • 200g pack chicory, trimmed and broken into leaves
    • 2 Rocha pears
    • 50g Pecorino cheese
    • 2 tbsp snipped fresh chives

    Method

    1. To make the dressing, whisk together the olive oil, balsamic vinegar and crushed chillies, using a fork.
    2. When ready to assemble the salad, arrange the ham and chicory leaves on 6 small plates. Quarter and core the pears then slice thinly and arrange on the plates. Using a swivel-style peeler, shave wafer-thin slices of cheese over each plate. Drizzle the dressing over, sprinkle with chives and serve.
