    Ham, Persimmon, and Manchego Wrap

    This canapé is full of interesting textures and flavours - dry cured ham wrapped around sweet-and-sour persimmon fruit with salty manchego cheese and peppery rocket.

    Makes: 8 canapés


    • 2 x 80g packs Waitrose Italian Dry Cured Ham
    • Waitrose Cooks' Ingredients Balsamic Glaze
    • 1 persimmon, peeled, cored and thinly sliced into 8
    • Handful of wild rocket
    • 50g manchego cheese


    1. Place 8 slices of the ham lengthways on a chopping board and drizzle each with a little of the balsamic glaze. Spread evenly over the ham.
    2. In the centre of each ham slice, place a piece of persimmon, 2-3 leaves of rocket and a sprinkling of pepper. Using a peeler or cheese slice, add a shaving of manchego.
    3. Roll up each of the ham slices, then serve immediately, with napkins.
