Healthy Tofu Broth

A healthy but warming soup, perfect for those veggie friends or a simple quick lunch or starter.

  • Total time: 15 Minutes

Serves: 2


  • 1 pack of Smoked Tofu
    1 Onion
    2 Red Chillies
    1 Tbsp Grated Ginger
    1 Garlic clove (grated)
    2 Handfuls of frozen sweetcorn or peas
    1 Litre of Vegetable Stock (or chicken if non-veggie)
    3 Spring Onions
    1-2 tsp Chinese 5 Spice
    2 Blocks of fine egg noodles
    1 tsp of olive oil
    Soy Sauce


  1. First chop the tofu into 1cm squares and fry off in a little oil until crisp. Set aside.
  2. Finely slice the onion and 1 chilli and fry with the garlic and ginger in the remaining oil until soft, then add the 5 spice.
  3. Bring the stock to a gentle simmer in a separate pan and add the onion mix and the tofu.
  4. Add the noodles and frozen sweetcorn/peas and bring back to a simmer until the noodles are cooked
  5. Add the soy sauce and season to taste.
  6. Serve the soup in bowls with finely sliced spring onion and chilli on top
