    Hearty Breakfast

    Having friends to stay for the weekend? Start the day with a hearty spread that will double as lunch. Our breakfast includes stuffed tomatoes, potato cake and scrambled eggs. Serve with extra hickory or maple cure bacon and Waitrose Premium, Gourmet or Mediterranean Sausages.

    • For The Scrambled eggs:
    • 3 eggs (medium)
    • 1 pack Waitrose Fresh Chives, coarsely chopped
    • 2tbsp single cream
    • salt and freshly ground black pepper
    • Knob of butter, for cooking
    • For The potato cake:
    • 1 x 400g pack Waitrose Rösti potatoes
    • 1/2 x 20g pack Waitrose Herbs for Pasta, coarsely chopped
    • 6-8 button mushrooms, finely chopped
    • 1/4 ring black pudding, finely chopped
    • 1 egg (medium)
    • 1tsp vegetable oil
    • For The stuffed tomato:
    • 4 fresh plum tomatoes, tops removed
    • 2 Waitrose Pork & Leek sausages, skinned
    • 4 rashers Waitrose Traditional Dry-cure Bacon


    1. Scoop out the flesh from the tomatoes with a teaspoon. Stuff each tomato with the meat from half a sausage then wrap a bacon rasher around the middle. Place on a baking tray in a preheated oven at 190°C, gas mark 5, for 20 minutes or until thoroughly cooked.
    2. Potato cake: mix all the ingredients together thoroughly. Heat a 20cm non-stick frying pan until hot, add the oil then the potato mixture. Fry over a medium heat for 5-7 minutes each side or until browned, turning half way through cooking.
    3. Just before serving, beat together the scrambled egg ingredients. Melt a knob of butter in a non-stick frying pan, add the egg mixture and cook, gently stirring.
    4. Serve everything on a platter and garnish with flat leaf parsley and cherry tomatoes.
