    Hearty Raclette and Chessy Loaf

    Serves: 4


    • Cheesy Loaf
    • 100g raclette
    • 1 Waitrose Petite Parisienne loaf
    • Hearty Raclette
    • 500g baby new potatoes
    • 1 garlic clove
    • 1 tbsp olive oil
    • Salt
    • Pepper
    • 6 vine tomatoes
    • 1 courgette
    • 1 rashers back bacon
    • 150g raclette


    1. Hearty Raclette: Halve 500g baby new potatoes and place in a shallow ovenproof dish with a chopped clove of garlic, 1 tbsp olive oil, salt and pepper. Bake in a preheated oven at 200°C, gas mark 6, for 30 minutes. Stir in 6 halved vine tomatoes, 1 chopped courgette and 2 rashers back bacon, snipped into pieces. Bake 30 minutes. With a serrated knife, thinly slice 150g Raclette and lay over the dish. Bake for 10 minutes until bubbling.
    2. Cheesy Loaf: Make 8 cuts down through a Waitrose Petite Parisienne loaf, stopping just short of the base. With a serrated knife thinly slice 100g Raclette and tuck a slice into each cut. Wrap the loaf in foil and bake in a preheated oven at 200°C, gas mark 6, for 20 minutes or until melted. Serve hot with soup or winter salads.

    Cook's tips

    This can be made with leftover cooked potatoes. Bake boiled potatoes for 20 minutes. Add cheese and bake for 10 more minutes until cheese is bubbling. Shown opposite.
