    Heaven and Earth

    Serves: 4


    • 750g medium-sized floury potatoes
    • Salt and pepper
    • ½ teaspoon ground nutmeg
    • Butter and oil for shallow-frying
    • 8 fresh all-meat pork sausages, such as bratwurst
    • 1 smallish apple, roughly grated
    • To finish
    • 500g apples, quartered, peeled and cored


    1. Boil the potatoes in their skins, leaving them slightly underdone, and let cool, preferably overnight.
    2. Peel, grate coarsely, toss with the grated apple and season with salt, pepper and nutmeg. Melt a knob of butter with 1-2 teaspoons oil in a frying pan.
    3. Spread in the grated mixture and pat into a pancake. Fry to a golden crust, shaking now and again to loosen the base.
    4. Place an upturned plate over the pan, and reverse the pancake so it lands on the plate crusty-side up. Reheat the pan with another knob of butter.
    5. Slip the pancake back and fry the other side till crusty.
    6. Tip out onto a hot plate and keep warm in a low oven. Meanwhile, fry the sausages until firm and brown.
    7. Cook the apples with a little water till mushy, then mash with a fork and cook for a little longer to evaporate excess juices.
    8. Serve each person with a quarter of the pancake, two sausages and a spoonful of apple purée - hand the remainder separately.
