    Herb and Garlic Beetroot

    Serves: 4

    Ingredients

    • 250g pack long-life beetroot
    • A little butter
    • 125g Waitrose Soft Cheese with Herbs and Garlic
    • Milk
    • Chopped Chives

    Method

    1. Drain a 250g pack long-life beetroot and pat dry on kitchen paper. Cut into slices. Heat a little butter in a frying pan, add the beetroot and cook until heated through. Arrange in a serving dish and keep warm. In a saucepan, heat 125g Waitrose Soft Cheese with Herbs & Garlic with enough milk to make a smooth sauce.
    2. Pour over the beetroot and garnish with chopped fresh chives. Serve immediately with roast meat and game dishes.
