    Herb Fritters

    The vivid scents of fresh, soft herbs have a special power to bring dishes to life.

    Makes: 8

    Ingredients

    • 120 ml whole milk
    • 135g self-raising flour
    • 1 tsp baking powder
    • 1 large egg, lightly beaten
    • 1 green chilli, deseeded and chopped
    • 5 salad onions, finely sliced
    • 25g basil, chopped
    • 20g mint, chopped
    • ½ lemon, grated zest only
    • 2 tbsp olive oil

    Method

    1. Beat together the flour, baking powder, egg and milk till smooth; season. Stir in the chilli, salad onions, herbs and lemon zest.
    2. Heat 1 tbsp olive oil in a frying pan over a medium heat. Pour in 1 tbsp batter for each fritter; cook for 2 minutes on each side, until golden. Cook in batches, adding more oil when required.
    3. Serve with crispy bacon, tomatoes and paprika-spiked greek yogurt.
