    Herby steak and chick pea mash

    Ingredients

    • 1 garlic clove
    • ½ x 20g pack flat-leaf parsley
    • essential Waitrose British beef sirloin steaks
    • 1 lemon
    • 2 tsp cumin seeds
    • 1½ olive oil
    • 2 x cans essential Waitrose chick peas

    Method

    1. Drain and rinse 2 x 400g cans essential Waitrose chick peas and put in a pan with 150ml water. Simmer until soft and most of the liquid has evaporated, then crush.
    2. Heat 1 tbsp olive oil in a small frying pan; add 2 tsp cumin seeds and fry for 30 seconds till fragrant. Stir into the chick peas with the juice of 1 lemon; season.
    3. Meanwhile, brush 4 essential Waitrose British beef sirloin steaks (about 200g each) with ½ tbsp olive oil; season and griddle on a medium-high heat for 2–3 minutes on each side. Set aside to rest.
    4. Chop ½ x 20g pack flat-leaf parsley and 1 garlic clove. Mix with the grated zest of 1 lemon. Sprinkle over the steak and chick peas.
