    Heston's grapefruit gin tea

    • Preparation time: 5 minutes
    • Cooking time: 10 minutes
    • Total time: 15 minutes plus cooling

    Serves: 6


    For the Earl Grey syrup
    125g white caster sugar
    1 bag Earl Grey tea

    To finish

    210g Heston from Waitrose Earl Grey & Lemon Gin
    18 basil leaves
    180g Earl Grey tea syrup
    300g Grapefruit juice, freshly squeezed
    Ice cubes
    Grapefruit peel and basil, to garnish


    1. To make the syrup: place 150g of water in a pan over a medium high heat and add the sugar. Allow to come to a boil until fully dissolved, remove the pan from the heat, add the tea bag and allow to cool completely.

    2. Using a muddle, press the gin, basil, syrup and grapefruit juice into a cocktail shaker and fill to the top with ice cubes. Place the lid on top of the shaker and holding the top, shake vigorously for 10 seconds. Pour the drink from the top through a fine tea strainer into 6 chilled tea cups, serve with a grapefruit twist and a small sprig of basil.
