    Hilary's Fancies

    • Cooking time: 12 minutes, plus chilling

    • Butter icing
    • 120g icing sugar
    • 60g butter, softened
    • 100g caster sugar
    • 2 eggs, lightly beaten
    • 175g self-raising flour
    • 1 tsp baking powder
    • Glac√© fruit, chocolate buttons etc to decorate Glace icing
    • 100g butter, softened
    • Glace icing
    • 120g icing sugar


    1. Preheat the oven to 180°C/gas 4. Prepare a muffin tin with 12 paper cake cases.
    2. Put the butter and sugar in a bowl and cream together until light and fluffy. Add the eggs in two or three lots, beating well between each addition and adding a little flour if the mixture curdles. Then fold in the flour and baking powder. Spoon the mixture into the cake cases and bake for 12 minutes until well risen and golden brown. Put on a rack to cool.
    3. When cold, prepare the icing. If you want to use glacé icing, mix the icing sugar with about 1 tbsp cold water to create a thickish paste. Spoon carefully on to the cakes. If you want butter icing, beat the butter and icing sugar together until smooth and fluffy. Spoon or pipe on to the cakes. Decorate further with cherries, chocolate buttons or anything else you fancy.
