    Honey, Fig and Ham Sandwich

There is a lovely flavour contrast between the salty Parma ham and cheese, and sweet honey and figs in this tempting lunchtime snack. Simply serve with a handful of peppery salad leaves.

    Serves: 2

    • 4 slices Waitrose Walnut Bread
    • 1 pack 4 fresh figs, quartered
    • 3 tbsp Waitrose Select Chilean Ulmo Honey
    • 125g ricotta
    • 4 slices Waitrose Riserva Parma Ham

    1. Preheat the grill to high. Toast the bread. Place the fig quarters on a square of foil and drizzle with 2 tablespoons of the honey. Grill for 3-4 minutes until beginning to colour.
    2. Season the ricotta and spread thickly over the toast. Fold the Parma ham slices on top of the toast and scatter over the warm figs and any honey juices. Drizzle with the remaining honey and serve with a peppery salad, such as Waitrose Watercress, Rocket & Spinach Salad.
