    Honey and lime glazed chicken

    An easy all-in-one tray recipe, a perfect midweek meal

    • Preparation time: 5 minutes
    • Cooking time: 45 minutes

    Serves: 4


    • 2 large carrots, cut into chunks
    • 2 red onions, each cut into 8 wedges
    • 8 chicken thighs
    • 3 tbsp soy sauce
    • 1½ tbsp clear honey
    • 2 garlic cloves, chopped
    • 1 tsp, chilli flakes
    • 1 lime, grated zest and juice
    • 20g coriander, chopped


    1. Preheat the oven to 220C, gas mark 7. Spread the carrots and onions in a roasting tray, place the chicken on top, season well and cook in the oven for 25 minutes.
    2. Mix together the soy, honey, garlic, chilli and lime zest and juice. Turn down the oven to 200C, gas mark 6, then pour the soy mixture over the chicken and vegetables. Roast for another 20 minutes, until the chicken is cooked through with no pink meat. Give the ingredients a stir half way through, but keep the chicken on top of the vegetables to ensure a crisp skin.
    3. Scatter over the coriander, and serve with rice.
