    Honey Pork with Apple Rings

    Waitrose British Organic Pork is lean, succulent and full of flavour. The pork is exclusively produced in partnership with one farmer and comes from organically reared pigs that live outdoors on the Norfolk fens. This tasty, healthy and low fat dish is made using organic ingredients.

    • 225g organic new potatoes, cut into large dice
    • 1 tbsp Aspall Organic Cider Vinegar
    • 2 tbsp Waitrose Organic Clear Honey
    • 4 tbsp organic apple juice
    • 1 tbsp chopped fresh sage
    • Freshly ground black pepper
    • 1 tsp Waitrose Organic Olive Oil
    • 1 pack Waitrose British Organic Pork Chops (2 chops)
    • 1 organic Braeburn apple, cored and sliced into 6 rings


    1. Cook the potatoes in a pan of boiling water for 15-20 minutes, or until tender. Drain. Meanwhile, in a shallow dish mix together the cider vinegar, honey, apple juice and sage and season with pepper. Place the pork and the apples into the mixture and turn to coat thoroughly. Marinate for 5-10 minutes.
    2. Heat the oil in a large frying pan until hot, then add the pork, reserving the remaining marinade mixture. Cook for 4-5 minutes each side, or until thoroughly cooked, there is no pink meat and the juices run clear. Remove from the pan and keep warm. Add the apple rings to the pan, cook for 1 minute each side, remove from the pan and keep warm.
    3. Stir the remaining marinade mixture into the meat juices in the pan, return to the heat and simmer for 1 minute.
    4. Using a fork, lightly crush the potatoes and season with black pepper. Top each pork chop with 3 apple rings. Pour the sauce over the top and serve with the crushed potatoes and steamed green beans.
