    Horiatiki Salata -Tomato and Feta Salad

    Serves: 6

    Ingredients

    • 1kg good, ripe tomatoes
    • 250g block of feta cheese
    • 1 onion, sliced
    • Kalamata olives (in oil, preferably)
    • Olive oil
    • Salt
    • Freshly ground black pepper

    Method

    1. Roughly chop the tomatoes and cube the feta cheese. Mix with the sliced onion and olives, and liberally douse with olive oil.
    2. Season, mix and serve with warm bread.
