Hot feta salad with sausages

Pack of 8 essential Waitrose British Pork Sausages
1 x ½ x essential Waitrose Red Onion
200g pack essential Waitrose Greek Feta
1 Pack of 6 essential Waitrose Plum Tomatoes
1 essential Waitrose Green Pepper
2 tbsp essential Waitrose Olive Oil
1 clove garlic, chopped
4 essential Waitrose White Pitta, toasted
1. Preheat the oven to 200°C, gas mark 6. Arrange the sausages on a baking sheet and cook on the bottom shelf of the oven for 30-40 minutes.
2. Finely slice the red onion and dice the feta and tomatoes, then deseed and dice the pepper. Arrange the tomatoes, pepper and onion in a shallow ovenproof dish.
3. Mix the olive oil with the garlic and drizzle over the vegetables. Scatter with the feta and plenty of freshly ground black pepper. Bake on the top shelf for 15minutes until hot before serving with the sausages and toasted pitta.
