Hot spiced BBQ

Best ever hot spicy marinade for pork or chicken

  • Total time: 10 minutes to make marinade, 20 minutes on BBQ

Serves: 4


  • 4 large pork spare rib chops, trimmed, or 8 lean belly pork strips or 8 chicken thighs cut up into chunks .
    For the marinade:
    2 tablespoons vegetable oil
    1 garlic clove; crushed
    1-2 tablespoons chilli sauce, according to taste
    2 tablespoons soya sauce
    1 tablespoon Worcestershire sauce
    1 tablespoon tomato puree
    1 tablespoon wine vinegar
    1 teaspoon ground ginger
    Freshly ground black pepper


  1. To prepare the marinade: put all the ingredients in a mixing bowl with pepper to taste and stir well. Put the pork or chicken in the marinade and leave for at least 2 hours, preferably overnight: Stir the mixture from time to time to ensure the marinade coats the pork. If using chicken chunks, thread onto 4 skewers before cooking.
  2. When the barbecue charcoal or grill is hot, remove the meat from the marinade. Lay chops/kebabs on the barbecue or grill rack. Cook according to taste, turning and basting with the marinade from time to time until all the marinade is used up.
