    Hot Toddy Beef

    Serves: 4

    Ingredients

    • Mash
    • Green beans
    • 1½ tbsp Waitrose Scottish Heather Honey
    • 750g British Beef Rump Steak
    • 70g pack cubetti di pancetta
    • 500ml pack Cooks' Ingredients Beef Stock
    • 100ml whisky
    • 1 large orange

    Method

    1. Cut 750g British Beef Rump Steak into 3cm cubes, removing any excess fat. In a large non-stick frying pan, cook a 70g pack cubetti di pancetta and half of the beef over a high heat until browned but not cooked through. Remove and set aside.
    2. Brown the remaining beef, then remove from the pan. Pour a 500ml pack Cooks' Ingredients Beef Stock, 100ml whisky, the finely grated zest, segments and any remaining juice of 1 large orange, and 1½ tbsp Waitrose Scottish Heather Honey into the pan. Return to the heat and boil vigorously for 8-10 minutes or until well reduced.
    3. Return all the beef and pancetta to the pan, lower the heat and cook for 5 minutes until the meat has cooked through. Serve with green beans and mash.
