    How to Use Canned Tomatoes (Quick Tomato Sauce)

    We asked Maria Sforza, Quality Controller at Faiella, for her favourite recipe and suggestions for Waitrose canned tomatoes. Serve this simple sauce with pasta or grilled or baked fish. It will be ready in the time it takes to cook the pasta.

    Serves: 4

    Ingredients

    • 2 tbsp extra virgin olive oil
    • 1 garlic clove
    • 400g can Waitrose Organic Chopped Tomatoes
    • 2-3 leaves of fresh basil
    • 450g packet of tagliatelle
    • Plenty of freshly grated Parmesan

    Method

    1. Heat 2 tbsp extra virgin olive oil in a heavy-based pan. Add 1 garlic clove, chopped, and cook for about 30 seconds until pale golden. Add a 400g can Waitrose Organic Chopped Tomatoes, season and stir. Cover and cook over a medium heat for 10 minutes, stirring occasionally to prevent sticking. Stir in 2-3 leaves fresh basil, shredded, and check seasoning.
    2. Maria serves this sauce with tagliatelle - cook 450g according to the pack instructions and drain well. Return to the pan and add the tomato sauce. Return to a low heat for a minute, stirring continuously - this will help the sauce coat the pasta well.
    3. Serve with plenty of freshly grated Parmesan. The Napolese add different flavourings to this basic sauce - try small cooked prawns, fried aubergine slices cut into strips and courgettes or halved black olives. Simply add to the sauce and heat through.
