    Indian Date and Nut Saffron Roll


    • 250g unsalted cashew nuts, ground
    • 2 drops almond essence
    • Pinch saffron infused in 2 tablespoons warmed milk
    • 1 tablespoon butter
    • 1 tablespoon sugar
    • 2 tablespoons chopped glacé cherries
    • 1 tablespoon almonds, blanched and skinned
    • 2 tablespoons chopped pistachios
    • 2 tablespoons chopped dates
    • 175g icing sugar, sifted
    • Icing sugar, to dust


    1. Using your hands, combine the sifted icing sugar with the ground cashew nuts, almond essence and saffron milk and make a dough. A little water can be added to ensure a smooth dough.
    2. Melt the butter in a pan, add the sugar, and then the remaining ingredients, and heat gently for 1 minute. Allow to cool.
    3. Place a sheet of greaseproof paper on a board, dust with icing sugar and roll out the prepared cashew dough into a rectangle, about 0.5cm thick. Trim the sides to ensure an even roll.
    4. Spread the nut and fruit mixture on top and roll up, using the greaseproof paper, as this will ensure a more even log. Dust with sugar and chill. Cut into rounds and pack into a small round box.
