    Italia Grape and Chicken Salad

    Grapes and chicken are the perfect combination for a light fresh summer lunch. This salad is also ideal for serving at a party buffet. There is no need to cook the chicken yourself. You can buy thick slices of hand carved chicken from the delicatessen counter.

    • 450g Italia Green Seeded Grapes
    • 450g cooked cold chicken, cut into bite-sized pieces
    • The creamy pesto dressing
    • 4 tbsp crème fraîche
    • 3 tbsp Waitrose Olive Oil
    • 1 tbsp Waitrose Pesto
    • 1 tbsp lemon juice
    • Salt
    • Freshly ground black pepper
    • To serve
    • Toasted fresh basil leaves to garnish
    • 1 pack mixed salad leaves
    • 1 tbsp Waitrose Pine Kernels


    1. Place the grapes and chicken in a large bowl.
    2. Place the dressing ingredients in a bowl and whisk together until well blended. Pour the dressing over the grapes and chicken and toss together.
    3. Arrange the salad leaves in a shallow salad bowl and pile the grape and chicken mixture in the middle. Scatter the pine kernels on top. Garnish with basil leaves.

    For a simple first course or summer lunch, combine Italia seeded grapes with crumbled blue cheese and serve with salad leaves dressed in vinaigrette.
