    Italian chicken with tomatoes & spinach

    Keep a jar of pasta sauce handy to rustle up speedy weeknight meals

    • Preparation time: 5 minutes to 10 minutes
    • Cooking time: 15 minutes
    • Total time: 20 minutes to 25 minutes 25 minutes

    Serves: 3

    Ingredients

    • 1 essential Waitrose onion, finely chopped
    • 1 tbsp Olive oil
    • 6 essential Waitrose chicken thigh fillets
    • 500g jar Knorr Red Wine & Herbs Bolognese Sauce
    • 250g essential Waitrose spinach

    Method

    1. In a large non-stick pan, gently cook 1 finely chopped essential Waitrose onion in 1 tbsp olive oil until softened. Add 6 essential Waitrose chicken thigh fillets and cook for 3-4 minutes, until browned.
    2. Adda 500g jar Knorr Red Wine & Herbs Bolognese Sauce, cover and cook for 15 minutes, until the chicken is cooked through with no pink meat, and the juices run clear.
    3. Stir in a 250g bag washed essential Waitrose spinach and cook until wilted. Garnish with parsley and serve with rice. Garnish with parsley and serve with rice.
