Italian Mess

I discovered this dessert at a cooking demonstration that took place at the Lanesborough Hotel, hosted by Paul Gayler.

  • Total time: 20 minutes

Serves: 4

Ingredients

  • 300ml Mascarpone cheese
    4 canned peaches
    50g crushed Amaretti biscuits
    150g prepared meringue
    100ml semi-whipped double cream
    2tb Amaretti liquor
    Fresh mint to garnish

Method

  1. Cut the peaches into cubes, place in a bowl, pour over half the liquor and leave to one side.
  2. Crush the prepared meringues into large pieces, mix with Mascarpone cheese and fold in the whipped cream.
  3. Add the remaining Amaretti liquor, the crushed Amaretti biscuits, fold gently together.
  4. Fold in 2/3 of the peaches, then dress in 4 martini style glasses.
  5. Finally, top with remaining peaches, garnish with the mint leaves and serve.
