750g pack frozen essential Waitrose Grilled Vegetable Mix
2 x 395g cans Waitrose Cherry Tomatoes
2 cloves garlic
2 tbsp red wine vinegar
4 tbsp essential Waitrose Olive Oil
2 essential Waitrose White Crusty Rolls
1 x ½ x essential Waitrose Red Onion
2/3 potted basil, torn
1. Preheat the oven to 220°C, gas mark 7. Tip the vegetables on to a lightly greased baking sheet and cook for 20 minutes, turning halfway. Stand for 10 minutes.
2. Meanwhile, tip the cans of tomatoes into a sieve over a bowl so the juice drains. Mix together the garlic, vinegar and oil with the tomato juice
3. Slice the rolls into a salad bowl. Add the grilled vegetables, half the torn basil, onion and tomato dressing. Mix then pile on to plates. Spoon over the remaining dressing and serve with the remaining onion and basil.
