    Ivan Allen's Dressed Crab

    The piquant sauce brings a little fire to this dish.

    • Preparation time: 15 minutes
    • Cooking time: 25 minutes
    • Total time: 40 minutes 40 minutes

    Serves: 4


    • 50g butter
    • 25g plain flour
    • 300ml milk
    • A pinch freshly grated nutmeg
    • 1 tsp white wine vinegar
    • 2 tbsp tomato chutney
    • 1 tsp French dijon mustard
    • 4 freshly cooked dressed cromber crabs
    • 100g fresh breadcrumbs


    1. Melt half the butter in a saucepan, add the flour and stir for 1-2 minutes on a medium heat. Remove from the heat and add 2 tbsp milk, whisking all the time. Return to the heat and slowly whisk in the remaining milk. Cook, whisking, for two minutes till the milk thickens. Stir in the nutmeg, vinegar, chutney and mustards.
    2. Take the meat from the crabs; put the shells in a baking dish. Stir the meat into the sauce with 70g breadcrumbs. Spoon this into the shells. Sprinkle with the remaining breadcrumbs, dot with the rest of the butter and bake for 20 minutes at 200C/ gas 6.
