    Jansson's Temptation

    This dish makes a perfect supper on its own, but don't be tempted to omit the anchovies - they are essential to the final rich flavour. However, if cooking for vegetarians use chopped capers and black olives instead.

    • Preparation time: 30 minutes
    • Cooking time: 60 minutes
    • Total time: 1 hour 30 minutes 60 minutes 30 minutes


    • 1.5kg waxy potatoes
    • 1 large onion, sliced
    • 100g jar La Monagasque Salted Anchovies, well rinsed and chopped
    • Salt
    • Freshly ground black pepper
    • 284ml pot Waitrose Fresh Double Cream
    • 25g butter


    1. Preheat the oven to 200°C, gas mark 6. Butter a 35x20cm deep roasting tin or baking dish. Peel the potatoes and cut into sticks about 5cm long and 1cm thick.
    2. Transfer the potatoes to the prepared dish. Add the onion, anchovies, salt and pepper. Use your hands to mix all the ingredients then flatten the top. Pour the cream over the top and dot with butter. Cover with foil and bake for 50-60 minutes until the potato is tender and the top lightly browned. This dish will happily sit covered for 15 minutes before serving, if necessary.
