Kale and cherry salad

Serves: 4 as a side
100g LOVE Life Hazelnuts
2 tbsp lemon juice
100ml extra virgin olive oil
180g pack Waitrose Duchy Organic Kale, washed and any tough stalks removed
200g pack cherries, halved and pitted
1 Preheat the oven to 180°C, gas mark 4. Scatter the hazelnuts over a baking sheet and cook for 10 minutes until starting to colour. Leave until just cool enough to handle, then rub in a clean tea towel to remove most of the skins. Chop very roughly with a large, sharp knife.
2 Finely grate the zest of 1 orange and add to a large bowl. Peel, then segment or slice the oranges and add the juice to the bowl. Add the lemon juice and whisk in the oil until combined. Season to taste.
3 Add the orange pieces, kale and cherries to the bowl and toss to coat. Transfer the mixture to a serving bowl and scatter over the hazelnuts to serve.
