    Knickerbocker Glorias

    Serves: 4


    • 500ml strawberry ice cream
    • 500ml vanilla ice cream
    • 300ml double cream, whipped
    • 400g strawberries, halved
    • 4 natural colour glacé cherries
    • 150g unsalted pistachio nuts, crushed
    • Raspberry Sauce:
    • 300g fresh or frozen rasperries
    • 1 tbsp caster sugar


    1. Make the raspberry sauce by puréeing the raspberries and the sugar, and pushing the mixture through a sieve.
    2. Working fast, scoop balls of strawberry and vanilla ice cream into tall glasses, scattering a few strawberry halves between the scoops. When the glasses are heaped full, dollop a spoonful of whipped cream on top. Carefully pour over the raspberry sauce so it trickles down between the ice cream and strawberries. Scatter a few pistachios over the cream, then balance a cherry on top. Serve immediately.
