    Laksa chicken noodles

    • Total time: 20 minutes 20 minutes

    Serves: 2


    1 tbsp oil
    180g chicken fillet, cut into thin strips
    ½ x 185g jar Cooks’ Ingredients Laksa Paste
    300g pack essential Waitrose Vegetable Stir Fry
    160ml can essential Waitrose Coconut Cream
    300g pack essential Waitrose Rice Noodles 
    Chopped peanuts and coriander, to garnish


    1. Heat the oil in a wok or large frying pan and fry the chicken for 4-5 minutes. Add the Laksa paste and cook for 1 minute before adding the vegetable stir-fry and cook for a further 2-3 minutes.

    2. Stir in the coconut cream and noodles and stir-fry for 2-3 minutes. Check the chicken is cooked through with no pink meat and the juices run clear.

    3. Serve garnished with peanuts and coriander.
