    Lamb and warm new potato salad

    Fresh spring flavours

    • Cooking time: 25 minutes
    • Total time: 35 minutes 35 minutes

    Serves: 4


    • 650g essential new potatoes, quartered
    • 3 tbsp olive oil
    • 1 tbsp essential white wine vinegar
    • 1 tsp ground coriander
    • 2 tsp ground cumin
    • 4 essential Waitrose lamb leg steaks (about 130g each)
    • 100g essential Waitrose radishes, sliced
    • 4 essential Waitrose salad onions, sliced
    • 2 tbsp chopped mint


    1. Cook the potatoes in salted boiling water until tender, then drain. Stir 2 tbsp olive oil and the vinegar through the potatoes and season.
    2. Meanwhile, mix the coriander and cumin, and season. Coat each steak in this rub. Heat the remaining oil in a pan over a medium heat and fry the lamb for 2–3 minutes on each side. Remove from the pan and leave to rest on a plate.
    3. Stir the radishes, salad onions and mint through the potatoes and arrange on 4 plates. Put a lamb steak on each and pour over the cooking juices. Serve with a green salad.
