    Lamb with Warm Lentil Salad

    • Total time: Ready in 25 minutes 25 minutes

    Serves: 2

    Ingredients

    • 1 tbsp olive oil
    • 1 finely diced red onion
    • 2 tbsp red wine vinegar
    • 250g pack Merchant Gourmet Microwaveable Puy Lentils
    • 4 tbsp chopped fresh mixed herbs.
    • 4 lamb leg steaks or cutlets
    • ½ x 50g bag rocket

    Method

    1. Warm 1 tbsp olive oil in a frying pan over a medium heat. Add 1 finely diced red onion and cook for 5 minutes until just softened.
    2. Increase the heat. Add 2 tbsp red wine vinegar, cook for 30 seconds, then add 250g pack Merchant Gourmet Microwaveable Puy Lentils, 4 tbsp chopped fresh mixed herbs, such as mint and flat-leaf parsley, season and mix well. Heat through, then remove from the pan and keep warm.
    3. Return the pan to a medium heat and fry 4 lamb leg steaks or cutlets for 4-6 minutes on each side or until cooked to your liking. Just before serving, stir ½ x 50g bag rocket into the lentils. Divide between 2 plates and top with the lamb.
