    Lancashire Cheese Straws

    Some people might think the words picnic and winter are not compatible. But I take the opposite view a picnic can be better in winter than summer.

    • Preparation time: 10 minutes
    • Cooking time: 10 minutes

    Makes: 16


    • 200g plain flour, plus extra for rolling out
    • 120g Lancashire cheese, grated
    • 2 tsp thyme leaves
    • ¼ tsp cayenne pepper
    • 100g butter, chilled and cubed
    • 1 egg yolk


    1. Preheat the oven to 200C/gas 6. Mix the flour, 100g cheese, thyme and cayenne together in a bowl. Rub in the butter until the mixture resembles fine breadcrumbs. Stir in the egg yolk and bring the mix together into a dough.
    2. Roll out on a lightly floured surface to form a rectangle, about 5mm thick, slightly larger than A4 size. Trim the edges and cut in half lengthways, then cut each half into 8 strips. Transfer to a lined baking sheet, sprinkle with the remaining cheese and bake for 10 minutes, until pale golden. Cool for 2 minutes, then transfer to a wire rack.
