    Langoustines in Garlic Butter

    • Preparation time: 20 minutes
    • Cooking time: 3 minutes to 4 minutes
    • Total time: 23 minutes to 24 minutes 25 minutes

    Serves: 6

    Ingredients

    • 200g butter
    • 6-8 cloves garlic, peeled and crushed
    • 36 langoustines or 24 large, raw, shell-on tiger prawns

    Method

    1. Melt the butter in a small pan over a gentle heat, add the garlic and stir for a minute or two.
    2. Barbecue the langoustines for 1-2 minutes each side, until the shells start to turn brown, brushing them regularly with the garlic butter. (If using prawns, thread them onto double skewers and cook for a couple of minutes each side, until the shells turn from grey to pink.) Serve immediately, with more butter.
