    Lemon and Honey Toddy

    • Vegetarian

    Makes: 2 x 200ml cups


    • 400ml hot water
    • ½ unwaxed lemon
    • 2 tsp freshly ground root ginger
    • 3-5 tbsp honey


    1. Pour 400ml hot water into a teapot, add the juice and grated zest of ½ unwaxed lemon and 2 teaspoons freshly grated root ginger. Sweeten to taste with 3-5 tablespoons honey. Leave to infuse for 5 minutes. Pour into cups through a tea strainer and place a thin slice of lemon on top of each drink.
