    Lemon and Myrtle Chicken Parcels

    • Diabetic

    Serves: 4

    Ingredients

    • 1 pack Waitrose 4 Chicken Breast Fillets
    • A bunch of salad onions
    • ¼ tsp Waitrose Cooks' Ingredients Easy On The Chopped Garlic
    • A pinch of Cooks' Ingredients A Good Pinch Of Wild Myrtle,
    • 1 tsp Cooks' Ingredients A Dash Of Sicilian Lemon Juice
    • 1 tsp olive oil
    • 2 x 110g packs Waitrose Lemon and Garlic Couscous
    • 300g pack Green Beans

    Method

    1. Cut 4 x 30cm squares of foil and fold each in half. Place a chicken breast fillet from a pack of Waitrose Chicken Breast Fillets onto each piece of foil.
    2. Cut a trimmed bunch of salad onions in half lengthways and divide between the parcels. Top each chicken breast with ¼ tsp Waitrose Cooks' Ingredients Easy On The Chopped Garlic, a pinch of Cooks' Ingredients A Good Pinch Of Wild Myrtle, 1 tsp Cooks' Ingredients A Dash Of Sicilian Lemon Juice and 1 tsp olive oil. Season with freshly ground black pepper.
    3. Fold the edges of the foil over to seal and place on a preheated barbecue or frying pan and cook for 8-10 minutes on each side, or until the chicken breast is thoroughly cooked and there is no pink meat.
    4. Serve immediately with 2 x 110g packs Waitrose Lemon and Garlic Couscous, cooked according to pack instructions, and a 300g pack Green Beans, freshly cooked.
