    Lentil & ham hock stew

    75g Waitrose Love Life Lentils
    1 onion, chopped
    1 carrot, diced
    400g can chopped tomatoes
    200ml Cooks’ Ingredients Chicken Stock
    1 courgette, diced
    180g pack Cooks’ Ingredients Pulled Ham Hock
    ½ x 25g pack parsley, chopped


    1. Place the lentils, onion and carrot in a saucepan. Add the tomatoes and stock. Cover and bring to the boil, simmer for 15 minutes.

    2. Add the courgette and ham hock and cook for a further 10 minutes until the lentils are tender. Season and stir in the parsley.
