    Lentils with Pasta and Caramelised Onions

    This Lebanese dish, known as rishta bi, can be eaten hot or at room temperature. The pasta is usually cooked in the same water as the lentils, giving an earthy colour and flavour.

    • Cooking time: 25 minutes to 35 minutes
    • Total time: 40 minutes to 50 minutes 50 minutes

    Serves: 4 - 6


    • 1 large onion, sliced
    • 6 tbsp extra virgin olive oil
    • 100g large green or brown lentils
    • 100g dried egg tagliatelle
    • 20g flat-leaf parsley, chopped


    1. Slowly fry the onion in 2 tbsp oil for 15-20 minutes until brown and caramelised, stirring often. It is a good idea to start with the lid on - this allows them to soften more quickly. Rinse the lentils and boil them in plenty of water until they are just tender. Some types take as little as 10-15 minutes, others take much longer. Follow the instructions on the packet.
    2. Crush the tagliatelle in your hand and drop the pieces into the pan with the lentils - there should be enough water to cover them. Add salt, stir and boil vigorously for 6 minutes, or the time stated on the pack, until the pasta is cooked al dente. Drain, adjust the seasoning, and toss with the remaining olive oil, the fried onion and the parsley.
