    Lime, Pineapple, Red Onion and Avocado Salsa

    Ingredients

    • ½ small pineapple
    • 1 red onion
    • 1 avocado
    • 3 fresh basil leaves
    • Lime juice of 1 lime
    • A few drops of Tabasco sauce
    • 1 tsp coriander seeds
    • ½ tsp salt and pepper

    Method

    1. Chop the flesh of ½ small pineapple and mix 1 chopped red onion and 1 chopped avocado, then snip in 3 fresh basil leaves.
    2. Toss with the juice of 1 lime, add a few drops of Tabasco sauce and 1 teaspoon coriander seeds. Season to taste with ½ teaspoon salt and pepper and chill for at least 1 hour. Serve with roast fish or meat.
