Lime, Pineapple, Red Onion and Avocado Salsa
Ingredients

½ small pineapple

1 red onion

1 avocado

3 fresh basil leaves

Lime juice of 1 lime

A few drops of Tabasco sauce

1 tsp coriander seeds

½ tsp salt and pepper
Method

Chop the flesh of ½ small pineapple and mix 1 chopped red onion and 1 chopped avocado, then snip in 3 fresh basil leaves.

Toss with the juice of 1 lime, add a few drops of Tabasco sauce and 1 teaspoon coriander seeds. Season to taste with ½ teaspoon salt and pepper and chill for at least 1 hour. Serve with roast fish or meat.
