    Lingon Kokta Paron

    If you prepare this dish the day before it is needed, the pears will develop a deep, red colour and full flavour.

    Serves: 4


    • 4 pears - Conference or Comice
    • 300ml lingon/blackberry preserve
    • 1 cinnamon stick
    • 6 cloves
    • 100ml red wine
    • 250ml water


    1. Peel the pears and set aside. Put all the other ingredients in a pan and bring to the boil. Add the peeled pears and let them poach until soft - about 45 minutes. Leave to cool in the pan.
    2. Serve with cinnamon ice cream.
