    Loin Steaks With Apple, Lemon And Mint Salsa

    Pork is traditionally paired with apple, but adding mint and lemon, as in this apple salsa, works surprisingly well, too. Try it for yourself in this hearty dish that is excellent for serving as a satisfying midweek supper accompanied with green vegetables, such as broccoli.

    • 1 Cox’s apple
    • Zest and juice of ½ unwaxed lemon
    • 1 tbsp Waitrose Extra Virgin Olive Oil
    • ½ x 20g pack fresh mint, finely shredded
    • 1 tbsp very finely diced red onion
    • 4 Waitrose British Pork Prime Loin Steaks, about 150g each
    • Olive oil, for brushing


    1. Coarsely grate the unpeeled apple and discard the core. Place the apple in a bowl, add the lemon zest, lemon juice and oil, and mix well to ensure the apple is coated to stop it going brown. Stir in the shredded mint leaves and the onion.
    2. Heat a griddle pan over a high heat. Brush the loin steaks lightly with olive oil and season with coarsely ground black pepper. Griddle for 6-7 minutes on each side, or until the steaks are cooked through and there is no pink meat.
    3. Serve the apple salsa with the hot pork steaks and steamed broccoli.
