    Loubia B'zeit (Braised French Beans with Lemon and Olive Oil)

    • 1 tbsp double-concentrate tomato purée
    • 3 tbsp lemon juice
    • ½ tsp fine salt
    • Large pinch ground white pepper
    • 150ml water
    • 3 tbsp olive oil, plus extra to serve
    • 1 large onion, finely chopped
    • 2 cloves garlic, finely sliced
    • 600g French beans, topped and tailed


    1. Put the tomato purée, 2 tbsp of the lemon juice and the salt and pepper in a bowl and add the water. Stir well and set aside.
    2. Place the olive oil in a saucepan over a medium heat and add the onion. Cook for 10 minutes or until the onion is slightly coloured, then add the garlic and beans, stir well and cook for a further minute.
    3. Add the seasoned tomato purée mixture, bring up to a simmer and cover the pan.
    4. Turn the heat down to low and cook for 45 minutes, stirring every now and then to make sure that the beans don't stick to the bottom of the pan. Add a tiny bit more water if necessary. When cooked, the beans should be completely soft and will have lost their vibrant green colour. Taste and season with the remaining lemon juice and some more salt and pepper if necessary. Transfer to a serving bowl and drizzle with a little more olive oil. Serve warm or at room temperature.
